David Gambill and Susan McCarn brought their passion for fine chocolate to Sonoma County in 2008 and have been indulging it ever since, spreading their delicious gospel to growing ranks of grateful cognoscenti and pairing their unique chocolates with fine teas at Sebastopol's Infusions Tea House.
As Laura McCutcheon writes recently in the Sonoma West Times and News, "Chocolate might be dark, but there’s nothing evil about it."
It’s fragrant, its full chocolate flavor lingers on the tongue, and according to Chief Chocolatier David Gambill, consuming this fine dark Sharffen Berger chocolate even has health benefits.
But this former geologist and international environmental policy and conservation consultant didn’t start making chocolate 27 years ago just to decrease his risk of heart disease, which he says is a benefit of eating moderate amounts of chocolate with at least 70 percent cacao in it. He started making chocolate for fun."
