Bleating Heart makes small batches of unique, handcrafted, premium quality “American Original” sheep milk and cow milk cheeses. Founded in 2009, Bleating Heart's production is concentrated in the west county.
Our sheep milk comes from Sebastopol, our cow milk is from Valley Ford, the cheese is produced in Bodega, and it's aged in a small aging room located on an apple orchard in Sebastopol.
None of our cheeses are inoculated with secondary cultures to force any particular molds to grow, we let the natural west county environment tell us what molds will grow on our cheeses!
