Fermentation

Fermentation makes foods more nutritious, and arguably - tastier!  Throughout millennia, humans have enjoyed the unique flavors and health benefits resulting from the process of fermentation - where microscopic organisms work to transform food and expand its usefulness.  Examples of fermenteed foods are found throughout human cultures and history.  Recent studies agree that eating fermented foods help people to stay healthy. Some of your favorite foods and drinks are probably fermented - bread, cheese, wine, beer, mead, cider, chocolate, coffee, tea, pickles, sauerkraut, kimchi, salami, miso, tempeh, soy sauce, vinegar, yogurt, kefir, kombucha.

During this weekend workshop we will learn about and experiment with various  types of fermentation, including veggies, kombucha and making hard apple cider.  In addition to a substantial amount of time spent learning this skill, there will be ample opportunities to hike, swim, canoe, birdwatch, stretch, wander among redwoods, explore Mark West Creek, sit around a campfire and listen to music, stargaze, relax and restore.

While staff will provide many guided activities in addition to the fermentation workshops, all offerings during the weekend are optional. We will enjoy a potluck dinner on Friday evening.  All other meals (including breakfast, lunch and dinner on Saturday, as well as breakfast on Sunday) will be prepared for you using local and organic ingredients whenever possible, some from the organic garden onsite at Rancho Mark West.  Participants will be camping in their own tents on Friday and Saturday night.  This outing is geared towards adults.
